Essential Live Arcade?

Aegis Wing is FREEE and good multi fun for a bit. Worms, definitely. As with Geometry Wars. You'll get more time outta that than anything else. So good.
Band of Bugs is a lot better than the reviews are suggesting. The only reason I haven't bought it is because I cannot find out how many unit types there are in the final version.
Marble blast Ultra is lots of fun, though i'm not sure if anyone plays the online much anymore.
Pac Man CE is great, it makes Pac Man feel like a whole new game.
Catlevania SOTN and Heavy Weapon are both fucking awesome games, plus plenty of PAers play Heavy Weapon too, 4 way survival War Parties are tense and very fun.
Although I stopped playing recentley because I was really tired and ended up shouting at a kid with ADD to stop his god-damn talking and feel really bad about it, I don't want to riisk running into him again....
DooM for sure, as far as Geometry Wars goes I think you pretty much get the whole experience in the trial minus the achievements, the classic mode (which is pretty much the same) and the ability to upload your high scores. IMO anyway, I never played that game for very long.

So funny I have played more Geo Wars than any game on the 360 save maybe Oblivion and Gears... maybe. It is also the only game I have all the achievements for. I would also argue you don't get the whole experience until around 4 million points when the spawn maxes out. You certainly aren't doing 4 million points in the demo. Also Geo Wars is awesomesauce.
I have a few friends who feel as you do though so apparently it's not for everyone. But it is cheap as hell. I maintain a full version of it should be on every 360.

You may want to get the Live Unplugged disc -- you can find it for $20 new, and it comes with six XBLA games (Geo Wars is the only must-buy, but there's also Texas Hold 'em, Bejeweled 2, Cloning Clyde, Backgammon and Wik) as well as a month of Live Gold.
Also, there's an option somewhere for your 360 to automatically download all XBLA demos -- I'd do that and then try every single freaking game out there.
But yes: Geometry Wars is a must-buy, and I'd also say Pac-Man CE and Heavy Weapon are, too. TMNT is also only 5 bucks and is fairly enjoyable.

Band of Bugs is great if you like SRPGs. It has multi, but I've only ever been able to play Spider Hunt.
Now, no multiplayer, but everybody with a 360 should own and love PoP Classic and Pac-Man C.E..
Marble Blast is excellent and I think it's only 400 points. The Live Arcade Unplugged disc is also a good buy - I still play Texas Hold'em. In fact, I think it's my most played, including disc-based games. And SotN holds up tremendously over time - never having played it before, the XBLA version still entertains me as a solid experience, which not a lot of the older stuff does for me. Heavy Weapon I don't know whether I can recommend, as it's another dual-stick shooter, but it remains the only XBLA game that I heard nothing about, downloaded the trial for, and just thought fuck yes. I imagine much of that was the title music, though.
The thing about Live Arcade, though, is that you can try absolutely everything and then pick what you want. So, that.

I played the hell out of Doom. Of course, I'm young and was a lil' kiddo when it came out, so it was like a brand new game for me (save for the freeware version I played a while back). Still, it's great even if you've played it, I think.

I think the achievements for co-op are live only.
Also, when playing live co-op you have a set number of lives. i believe that's not the case in offline (though I could be wrong)
I've been playing Geometry Wars for a while now and I just figured out there were bombs. That's what I get for not paying attention to anything. The game is a lot easier now!

Someone should get around to porting over Micro Machines V3. Mad Tracks is okay... It's not offensively bad. But I wouldn't actually pay money to play it.
With those 2700MS points, I would recommend picking up Heavy Weapon and Pac-Man: Championship Edition now and wait for Bomberman to come out (scheduled for sometime this month). Heavy Weapon is a fantastic action game, especially with 4 players (and the online system works well with very little lag) and Pac-Man: CE is shockingly good: I don't think I'll ever be able to play the original Pac-Man or sequels again. Bomberman is, of course, the definitive action party game. Oh and also pick up Aegis Wing since it's free and I hear multiplayer on it is pretty fun.
Later, when you have more points, pick up Castlevania: Symphony of the Night (one of the best games from the PS1) and Geometry Wars (a little too chaotic for my taste but still fun). In the meantime, pick up the demo for Geometry Wars since it has quite a bit of gameplay in it.

Those are what I've enjoyed the most. Only Heavy Weapon has multi though, and its damned fun in four player.
Also worth mentioning; Jetpac Refuelled, Worms, Alien Hominid HD, TMNT 1989, Aegis Wing, DOOM and Uno (which you've got). All multiplayer.
