I haven't purchased any of my music from iTunes itself, is that why?
In iTunes, select the song(s) you want to add artwork to. Right-click on them and choose 'Get Info'. Click on the Artwork tab, and you can either drag the cover art into the panel or click "Add..." and select it from there. Next time you synchronise your iPod, the artwork will be available on it.

Amazon.com is a good bet. 300x300 artwork for virtually any album that's ever been for sale. Amazon also (usually) has listings for vinyl albums, which has been helpful for me a few times, I usually buy vinyl if I have the choice, and a few albums in my collection have different artwork for the vinyl release. I know that's pretty anal, especially considering that my Sansa displays the album art at maybe 64x64, but... >_>
