I usually buy a good tomato soup or veggie stock (you can thin it with water and add spices), then throw whatever sounds good in there. Potatoes, rice, celery, carrots, corn, mushrooms, etc. Some spices I like are paprika, saffron, basil, thyme, cilantro, along with the typical salt and (chile) pepper, etc. Of course, some combinations don't always work, but it's difficult to mess up. It's hardly a science to me, so YMMV.
I know you said veggie stuff but what I do is buy the Marie Calendar crock pot meals in a bag. I'm sure they have some without meat. Best things ever, dump in the bag contents, go to work, come home and eat
My wife will occaisionally take about 2 quarts water, mix in chicken bullion to taste, then throw in rice and whatever vegetables and/or meats we can find in the fridge. Sometimes she'll replace the chicken bullion with tomato paste. In any case, it doesn't seem like it would turn out, but it's always awesome.

Do you have to cook the rice yourself or does it just work it's self out?
Put in as many bratwursts as you can fit (pierce them first). Add beer to cover them, usually only takes me two beers. Don't use a crappy beer just because "you won't be drinking it." Its only two, I usually buy a six-pack and drink the remaining four that night. Heavy beers work best, I use Amberbock or Shiner Bock or something. Set on low for as long as you'll be gone, then finish on grill or panfry when you get back. Be careful, there will be very flammable goodness dripping down while you grill it.

8 ounces butter beans
8 ounces kidney beans
8 ounces baked beans
1 medium onion
1/2 cup ketchup
1/2 cup brown sugar
1/2 tablespoon garlic salt
1/2 table spoon paprika
1 tablespoon chili powder
2-3 tablespoon cayenne powder
through everything together and cook on high setting for 6 hours and enjoy

onion soup mix or beef stock (beef stock is better, but you said you wanted vegan)
potatoes cut into roughly eight pieces. (halved horizontally twice, then halved vertically, if that makes sense)
good fresh baby carrots
mushrooms
one celery stalk or celery powder
salt, cumin, pepper, garlic (light), and onion powder (if you used beef stock instead of onion soup mix) to taste
let that slow cook while you're at work, come home, cook some rice (I prefer cooking the rice separate rather than mixing it in with the rest) and enjoy.
For meat lovers, either use a roast, or cube some good beef tenderloin, brown it in a skillet, and add it to the mix during the last hour or two, depending on the temp setting.
EDIT: I don't remember if it was a post in this forum or another one but for the college students out there there's a site that has instructions on how to take a huge crock pot and fill it with vegetables and basically keep a really good soup/stew going for like a month. It's cheap, and healthy, and can feed about four or five people. I kept one going for like a week back in college and it was pretty fun. If you do it though stay away from adding meat to it until you've gotten good with keeping it going, so nothing spoils or gets nasty.
It is a vegan version of a chili I used to make. I had to alter it because of the GF I had at the time didnt eat meat. I liked it alot so I just kept making it. Uh as far as name I never really gave it one.
I just made some chili in the crock pot yesterday and it was great. I used ground beef but you could substitute the meats with vegetarian alternatives.
1LB ground beef (already browned in a skillet, add chili or taco seasoning if you like)
1 can tomato puree
1 can diced tomatoes
1/2 diced onion (maybe less, I am not an onion person)
2 tablespoons chili powder
1 can chili beans
1 can kidney beans
1/2 cup of Ketchup
6 strips of bacon
1 jalapeño
Add hot sauce/salt/pepper to taste
Cook on low for 12 hours or high for 6 hours. Eat with cornbread and fall asleep immediately following.
Speaking of which, if you want cornbread, I have another recipe that is awesome. All you need is a box of Jiffy cornbread mix, two eggs, a stick of butter (preferably the salted kind), and 1/2 cup of cottage cheese. Mix up the eggs, cottage cheese, and Jiffy in a bowl, but don't mix it up all the way. It needs to be a little bit fluffy.
Next melt the butter, yes a whole stick, in the cooking pan you plan on making the cornbread. Spoon the cornbread mixture over the butter, but don't mix it with the butter. Then just cook the whole thing for 30 minutes on 325 degrees. Check it when time expires, the crusts should be slightly brown but not burned.
It's by far the best cornbread ever, but if you want to mix it up a bit you can add pepperonis, jalapeños, or onions to the mix but don't go crazy with them. You can thank me later.

Just a normal sized bottle of root beer, or can.. 12-16oz.
I forgot to add - don't use diet root beer, you need regular - it's the suger in it that works the magic.

8-10 hours on low, 5-6 on high. Turns out better on low though - that's for around 2 lbs... lower it a bit if you do something smaller.
