Converting video files for the 360

So, I bought a 360 about a month ago, and I want to take video files and convert them to something the 360 can read. Then I can burn them on DVD and my family can watch them easily. Messing about with a link to the PC and Windows Media Centre is not practical for my family - I'm the geekiest one, and I know almost nothing about video playback.

I know that the new fall update increases the 360's functionality (though I don't know anything about file types beyond the names). However, it still doesn't support MKV files, right?

So can I convert MKV to something else that will work? If so, what file type and with what software?
