I'm trying to run Bioshock (and want to run future games) and here's what I have
1 GIG Ram (ddr2 533MHz)
Pentium 4 640 w/ HT (3.20 GHz, 800FSB)
256MB PCI Express x16 nVidia GeForce 6800
So, do I SLI another 6800? Or go for a different GPU? Or do something else?
If it isn't an sli capable motherboard, get a new card. The 8800GTs have good performance for the price. If you do have an sli capable motherboard, get a new card. The 8800GTs have good performance for the price.

Everything I've ever heard on the subject indicates SLI simply isn't worth it from a cost/performance perspective. You'll almost always get a bigger improvement from upgrading your card than adding another one in SLI. The exception is if you need ludicrous graphics power and want to SLI two top-end graphics cards, but that doesn't apply here.
Thanks all! Without the 250+ to sink into a 8800GT, I've decided to return Bioshock and get some console games.
Maybe someday I'll have a 360 and can just get Bioshock on it.

a second gig of ram will also do wonders for your gaming performance, chief, and will only cost you around $80
Definitely throw away that 6800 for a 8800 gt or gts as soon as you can. However, given the other components you mentioned in your system, you won't see the performance gain you are hoping for (though you WILL see a gain).
Way to only recommend 1 card and still keep recommending it after he said it was too expensive, H&A! The Radeon 3850 will probably max bioshock in dx9, and costs about $170 at newegg.

Don't pick up Crysis then. I'm not bashing the 8800GT, I've got the BFG version, but everything I throw at it runs like a dream maxed out.
Crysis, I need to set to medium for most settings.
