So, I got all of these great games for Christmas. Unfortunately, due to work, girlfriend, and a terrible WoW addiction, I simply don't have the time to dedicate myself to each title like I know I should. So my question is, what order should I play the following titles to get the most joy out of them and to get from one to the next quickly?
Assasin's Creed
Mass Effect
BioShock
The Orange Box
Guitar Hero 3
I would say Bioshock, it's probably got the right amount of fun, game time, and well designed too, so you get a stellar gameplay experience in merely a few hours.
Take your time, they won't get any less fun with age.
(I really liked Bioshock, and it's kinda short - you could start with that!)

It is interesting you say that, as it nearly exactly sums up my feelings on your advice.
Let us agree to disagree on our feelings about GH3.
Oh yeah, GH3 is for PS2 and not a next gen system. The only guitar I have for next gen is the 360 guitar that came with Rock Band (which, as most of you probably know, is a POS). So yeah, I might actually return it/exchange it whatever.
And Mass Effect... Well, like I said, I already have one massive time sink in my life, I'm not sure I need another
It's tragic really. Guy has four spectacular games available, one of which is spectacular only to a certain crowd (I find it lots of fun, but it's fine to dislike it. It's pretty unique.), and if he just stopped playing World of Warcraft he could indulge in them all.
And me because my advice is great and is designed to provide maximum entertainment and the least possible waste of time because, let's be honest, those other games are pretty much huge wastes of time.
Listen, if exploring a collapsed underwater society which has reached an unfathomable level of perversion and biotechnology is wrong, then I want to be wrong. If rocking out to fantastic songs in a fantastic game is wrong, then I want to be wrong. If exploring worlds whilst manipulating reality through science is wrong, then I want to be wrong. If hunting down nobility in Middle Eastern cities with unmatchable grace and lethality is wrong, then I want to be wrong. If breaking reality and being taunted by an insane AI is wrong, then I want to be wrong. If fighting the Combine to stop what would be a final crippling blow to humanity is wrong, then I want to be wrong.
If taunting people whilst hitting them in the back of the head with a baseball bat is wrong, then I want to be wrong.

mass effect, sprinkled with gh3 (which imo is a game you won't "finish" until you feel you are done. or 5-star everything I guess but that takes a long time as I understand it)

Well, first play Portal. It's short, so you should easily find time for it. Everyone should play it.
After that, I'd say either Mass Effect or Bioshock. If you loved KotOR or just like sci-fi and RPGs, then go with the former. If those games aren't your cup of tea, then Bioshock.
