I have not been to Oahu specifically, but Hawaii has a lot of natural beauty and geologic wonders so you might consider organizing a couple hiking trips to points of interest on the island. Going to a luau would probably also be a pretty unique and fun experience. Find a snorkeling beach if you have any interest in swimming with colorful fish, sea turtles and other aquatic creatures. Definitely try some of the local food as well (Loco Moco is one dish that is pretty interesting).
I visited the Big Island in March of last year with my family and found that it is a good idea to have a guidebook with you. It's easy to get overwhelmed with the amount of stuff that there is to do or overlook something that might interest you and a guidebook is a nice reference to have on-hand to alleviate some of that. Some friends lent us their copy of a book called The Big Island Revealed, and it included everything from hotel, restaurant and beach reviews to information on particularly interesting places to go and things to see. It was really concise, well-organized and well-written, and it helped us find a great beach and some awesome food among other things. It looks like they make a book for Oahu as well:
