I used to live on the westside of Los Angeles, where I could find Bay Cities or a few neat places in Manhattan beach and so forth. Now, however, I'm in the center of Hollywood and I have no clue as to where I could find a delicious sandwich to keep me company!
I guess I'll be the first of many to say it...but why not make your own?
Grab a good loaf of bread, some deli meat, and your condiments of choice and go to town. You can't actually tell me that you get to customize your sandwich at your favorite sandwich shop as much as you could at home.
Not only will you be able to get exactly what you want, but you will really save a ton of money. There really isn't anything a sandwich shop can do that you can't.
I'm sure this wasn't what you were looking for, but give it a shot. At the worst you lose a few bucks on some decent sammiches.
Oh, and if your thing is paninis? Cook the sandwich on a nonstick pan (with a little butter or nonstick spray, I don't think you need it though) and take a brick wrapped in tinfoil that has been heated in an oven (obviously be careful) and put it on top. Super melty and compressed sandwiches, at half the price.
