    Naruto.

Since you would be starting from the begining, it would be easy to skip worthless episodes, and watch the fights. The series starts going downhill after the last main arc (Which I won't name for spoilers sake), but it's worth watching.

I have been out of the anime loop for a long time now, but I felt compelled to point out that not only is this a pretty shitty suggestion to give to anyone, but the OP even specifically stated:
I usually prefer anime that has an actual, good, coherent plot-most of the ones I like tend to have more adultish themes- And stuff like One Piece I hate.

Strikes one, two, and three for Naruto, I'd say.

As for my own addition, I'd say check out some movies. I never really stick with anime series because so many of them lack the criteria that you've mentioned that I also tend to care about, but movies are a completely different story. Perfect Blue, Millennium Actress, Tokyo Godfathers, Paprika, Jin-Roh, Akira, Ghost in the Shell, Ghost in the Shell 2: Innocence, hell, even the Cowboy Bebop movie are all excellent nuggets of Japanese anime goodness that don't require an epic attention span and the ability to ignore filler.

    Evangelion

Watch this, and other animes mentioned. Then watch Martian Successor Nadesico, and laugh at how it points out the absurdity of 99% of anime. Good times.

Also, lack of Slayers, Lodoss War (original series), and Patlabor makes me cry a bit inside.

He asked for new so I didn't mention Slayers (However it's also impossible to find the series now instead of just the OVAs. I miss Goury dammit! And Lisa Ortiz.)

The series are all back in print now. Funimation bought them when CPM waited too long to renew their license, and they've remastered all the episodes (but kept the original dub) and released each season for $30 a piece.

Most retailers aren't ordering any of the series since it's older, but you can still grab them on amazon or right stuff.

    Remastered how? I mean... er...

Please don't make me spend money. :(

He likes Bleach. There's a decent chance he'll like Naruto.

What about it? It was pretty good to me.
I like to think Spike survived, because the creator of the show says his fate is left open to interpretation. It seems implied that the star going out is signifying his death, but I think it's more referring to the end of the series. The ending song is amazing.

The rights for Macross are still held up in a huge dispute. Chances are, if the rights to Macross 2 and Macross Plus lapse in the US, they'll also disappear and go out of print for a long, long time.

Deathnote was good for awhile but what ruined it for me was not following the manga so the anime had a crappy ending and it's currently being aired on Adult Swim.

Watch Death Note, but google up an alternative ending if you don't like the end.
