Actually, for me it's internships, but the idea's the same - a lot of employers offer both e-mail or snail mail options for sending in your resume and their app, which is offered as a .pdf file.
Question is, aside from buying Adobe Pro to edit the .pdf, how would I go about filling out such a file electronically? Is my only bet printing it out, filling it out, then scanning it back into my computer? It wouldn't even be a .pdf anymore, and I think that might raise some red flags on the e-mail attachments I'd be including...

If their download attachment is a PDF it means they usually expect you to mail it in. If they have a true online application, with fill in the blanks and submit setup, then cool, but if it's just the printable PDF I'd mail it in.
Some places will offer a fillable PDF form, which you don't need the full version of acrobat to fill it out. Some places are also fairly clueless and think they're doing that, but they're not.
