Roaches are a bitch to get rid of; the first thing you should do is remove all food sources from your car. This will help, but won't solve the problem, since roaches can live for about 10 generations by feeding off of themselves.
Next, I'd call an exterminator, see what they recommend (just ask for advice, you don't have to hire them).
Get the car detailed. That will eliminate most of the food sources (and scare some of them out of the car) and then put roach bait in the car so that the only thing they can eat kills them.

Yeah, as far as evolutionary perfection goes, humanity has a long way to go before it catches up with roaches.
not to thread-jack, but Heroes agrees with that statement.
back on topic, I'd agree about calling a couple of exterminators to ask what they'd do. You can also try to wiki a couple of options. I'm not sure how effective poisoned roach food is, but it would be a good first step. Also, do you know if they are in a concentrated area or is it widespread? I'm suggesting because you can always try and spray them down with good ole' WD40. I'm not 100% sure they'll kill roaches, but they've worked on most insect problems I've had in the past.

... you will be the falcon, and I shall remain... The Falconer!
Do you park the car in a garage? Because you already had an infestation, the food just made it obvious.
Detailing the car (as said) is the first step, as they eat and can live off whatever scraps of food are in the fabric.
Two, be careful transporting things in the car. You don't want them jumping from your car to another person's house or back into your home.
Three, if you see one with an egg case, KILL IT. Then smash up the egg case. That's about 40 roaches in that case, and a roach only needs to mate once, then it can continually give birth for the rest of it's life. One female roach left unchecked equals about roughly under a thousand new ones.

Tilex does a good job too. It is basciallly bleach.
As I said earlier use the internet to purchase Avert and Max Force. This combination of extremely strong roach baits never fails. You can also use them to roachproof a home by opening every outlet and putting a bit of each together in the outlet away from the wiring.
I refer to them as my personal reeces peanut butter cup of doom. Also combined with the sterilizers you will never see roaches again.
I say buy online because some states outlaw these baits and some are so strong they are only available to license contractors but all the online stores that have it available ship to you anyway.
This might be one of the most horrifying things I've ever heard...
Roaches...in your car? (Yeah, I almost went for a snakes on a plane joke)
Really though, have you looked to see where the little bastards might be nesting? You might just be able to kill them on sight. I know there are a ton of places in a car where they can hide, but most are pretty accessible.
Other options? Put it in a garage (if you have access to one) and use a bug bomb. Traps and other things work well too.
If you just try to starve them, they'll leave and try to find food elsewhere. This means possibly infesting your house/parking garage/wherever you leave your car.
I've said this many times: the most effective thing against roaches is boric acid. You should be able to find it at a hardware store. It's cheap, and it's the only thing that's definitively effective against them.
It acts as both a poison to them and is abraisive to their exoskeleton causing micro scratches by which they lose moisture and dehydrate.
It's fairly safe for humans.
You can make a bait by mixing it with flour and sugar. I prefer just to dust wherever they are likely to walk. Try laying down a coat of it in your car every night.

Why? Is that stuff flammable or something? Obviously it works inside the house, I figured enclosing the car would yield the same results.
its extremely flammable if you use enough which is why they suggest not to use it in rooms smaller then a certain amount. On a side note I had this problem a few years ago, had a car sit for 6 months with a broken head before I bothered fixing it, and standard roach traps, under the seats solved the problem.
Do not bug bomb your car. There are too many toxins in that even when they get in your cloth seats and you have to sit on them every time you drive and absorb the toxins.
As tempting and satisfying as it would feel, do NOT smash the roaches. That's thier reproductive sick joke: If you smash a female with eggs, more than likely the eggs will make thier save against crushing blows and live on to be tracked somewhere new by you until. You scrape them off your shoe, and the problem starts up all over again.
Yeah definately don't bug bomb your car. Those bombs are designed to fill fairly large rooms, not cars. The stuff settles on every surface (the instructions say to not leave dishes out and cover surfaces) and is residually toxic.
As mentioned WD-40 works if you spray it directly on them, because it clogs the holes in their body they breath through. Good ol' hairspray (like cheapy Aquanet) does the same thing.
Boric acid is awesome, ie borax. It doesn't kill the bugs instantly, allowing them to take it back and share it with other bugs. Especially effective on ants because they carry it back to the nest and feed it to the eggs. You don't have to mix the paste yourself, if you buy Terro its the same thing. You can find Terro at places like Home Depot, both already baited in enclosed traps or just a bottle of the "syrup".
I swear by Terro, the hard part is to resist the urge to squish all the bugs as they just sit around the poison eating.

Wow, I laughed way too hard at that. This thread is absolutely terrifying. The thought of making a turn and a roach falling into ones lap is probably the most disturbing thing i've ever heard. I'm about to wikipedia roaches after reading this
and a roach only needs to mate once, then it can continually give birth for the rest of it's life. One female roach left unchecked equals about roughly under a thousand new ones.
I remember one roach guy that came to do the apartment building not only instructed us to smash egg cases between our fingers, but to then flush them down the toilet.

WD-40 kills insects? I did not know this.

Guess I didn't have to read it...

But honestly, I don't want to see pictures.
I guess he really hated roaches.
So yeah, detailing + no food has worked so far. It's been a week since I've seen the bastards. I'm gonna lay some baits and traps just to be sure.
In the long term that's the best way to go.
