Tiny movie question

What was that movie where the guy could jab his knife really accurately between another guy's spread, flattened fingers, and then he did it all fast and the guy was freaking out? My fiance thinks the guy whose hand was at stake then got stabbed, but I don't. What the hell was that from?

    Alien (or Aliens? I think Alien). Lance Hendrickson's character did it.

    I was thinking Aliens, but not sure if they'd gotten to it in that movie with all the killin' and stuff. My problem: asking the one person alive who hasn't seen it.
