Building A Portable Linux Install

After getting a new computer, I decided to try something with my old secondary HDD on my old machine - make it into a portable Linux install. I've already installed the drive (a 200GB PATA Maxtor) into an enclosure, and I've managed to get Ubuntu x64 to install to it, and place GRUB on the portable drive (not the main drive). But when I tell my machine to boot from USB, I get the GRUB screen, but then when I select the Ubuntu install, it fails. Am I missing something here?
