My current setup involves my TV, PC Speakers, and a headset. Right now if I want to change which one my PC audio goes to, I have to reach down to the back of the PC and change which wires are plugged in.
I'm hoping there's some kind of device I could pick that I could plug into my PC and plug all my audio devices into and then flick a switch to say which one to output to. Anyone know what kind of setup I would need to pull this off and where I could get everything?
A audio source selector sounds like what you're looking for. I just checked Google, and most of the ones listed are video/audio, but you don't need to use the video. Cost should be <$20 including shipping. (Radioshack may have one.)
The trick is you want a mechanical one (if it doesn't need power, you're in good shape), and you need to plug everything in backwards, so the "output" is to your computer, and everything else is "inputs".
However I have computer speakers and a stereo system both attached to my computer and I do what Monolithic dome reccomended. Just grab a Y-splitter and turn off speakers that don't need to be in use.

and just use the volume controls on my headphones and speaker to decide which one is "playing" the audio.
