Hi guys, I just got a graphics card in my girlfriend computer (The one she had before didn't do 3D Acceleration what-so-ever), so now I'm looking to show her some games. Previously, she has eaten up ScummVM games like the Monkey Island series, but I guess there aren't too many new ones of those around..
So basically what I'm looking for is a game where you can take your time and play at your own pace with no real penalty or whatnot for death. But also something that would at least kinda show off that the computer can actually do graphics well now..
So far I'm definitely hooking her up with Psychonauts for the writing and easy to grasp gameplay and then I'm pretty much blank.
Portal sounds like it would be right up your guys' alley. I know recommending Portal is overdone, and I'm not even a huge fan of it, but it's both relaxing and fairly pretty. Plus if you get the Orange Box you can enjoy TF2
Longest Journey and Dreamfall might be decent choices, though there are occasional action bits in the latter.

Also the Syberia series is really good. Both TLJ and Syberia feature female protagonists as well which might appeal to your girlfriend. They're both adventure games along the lines of the LucasArts library.

I "third" The Longest Journey, Dreamfall, and Cyberia. I never finished Cyberia, but what I saw was pretty cool. All three should be up her ally if she enjoyed the older Lucas Arts adventures.
While it requires some thinking, Crazy Machines or The Incredible Machines are games that you can take at your own rhythm, and also the music is usually soothing.
While the game is not a relaxing game if you try to progress in it, I find that cruising around Paradise City in Burnout Paradise is quite a fun and careless experience.

Test Drive Unlimited. You can just cruise around a massive tropical island (took me about an hour to get from one side to the other) and you don't have to race, the entire thing is wide open.

I really dug Aquaria. It has cadences though, of relaxing cruising to frantic dodging/shooting, but it's pretty intuitive stuff that pulls you in and wouldn't necessarily be a turn-off for a non-action-oriented player. And the game is just so appealing that it can probably transcend genre preferences, though I must concede that even I found some of the bosses to be frustrating. Has a demo, so try her on that first. The full game has an order of magnitude greater environment variety/epic-ness and fun, but you can get the idea with the demo.
I say Portal. Not the most advanced graphics anymore, but its the best mix of everything you want. There's dying but no real enemies, just environmental hazards and the game autosaves a lot. Its like a first person puzzle.

I'm going to go ahead and recommend Oblivion, Sam & Max and Jade Empire. Oblivion with the proper tweaks and AddOns to kick out the annoying bits. Sam & Max should be obvious and Jade Empire has a very relaxed atmosphere and you can pause the game with the spacebar iirc.

Lots of great suggestions here, guys! I actually already got her Audiosurf and have been seriously pondering the new seasons of Sam&Max, but I don't know why I didn't remember Portal. I even have it on my Steam-thingy!

I'm not sure what the OP wants. As far as casual games go Peggle is a fine choice. Uuuh, bejeweled? Puzzle quest?
Since alot of people seem to be recommending console games, Beyond Good and Evil seems like a good bet. Its exploration-heavy and combat light, and it has ze french charm.
[EDIT}: I should mention there is an excellent PC version of Beyond good and Evil. It's from before Ubi started half-assing all their PC stuff.

I can hit 120 stars on Mario 64 in under three hours (nowhere near the fastest of times, but still...). I adored the floating levels in sunshine and wished they could hav emade up the whole game. I've hit 242 on Galaxy. Lost Levels? Pfft. I've finished every level of N+. Completed Ninja Five-O/Ninja Cop on Hard. Twice. (This GBA masterpiece is one of the best platformers ever made). I wish PixelJunk Eden was a little bit harder (though I haven't hit the later gardens yet...). When LittleBigPlanet comes out I look forward to making bastard hard levels filled with perilous drops (and skateboards).
And now that I've successfully shown a stranger over the internet that he's misinformed, I will maintain that Meat Circus was still a shocking difficulty leap, considering the enjoyable but relatively sedate platforming that led up to it. I had friends curse me out for recommending Psychonauts because of that damn meat circus. I told them to stop with the beatings and take their concerns to Tim Schaefer, but they wouldn't listen. The beatings continue.

The Incredible Machine does rule. All of them. I remember a later game in the series...maybe a cartoon one with 50s era laser pistols. It had relaxing music.
Enigmo is along the same lines and has a free trial. Although there is less variety in puzzles and the goal is slightly different.

Sure, that level was annoying, if only because of the little kid's voice, and I enjoyed the other levels a lot more.
