Due to financial and other circumstances I cannot my university of choice this year and want to defer my acceptance to next year, once I have worked and things have settled down a bit. To defer an admission, University of Toronto wants me to write them a formal letter saying what I will be doing for the duration of the deferral, why I am deferring and guarantee that I won’t be attending any where else for he duration of the deferral.

I have been admitted but I cannot attend this year. Can I defer my admission?
Admitted students can request a one-year deferral of the original offer of admission. There is no guarantee that the request will be approved. The request must be submitted by September 1st of the academic year to which you have been admitted. You may not attend another post-secondary institution during the deferral period and all conditions placed on your admission must be fulfilled. To request a deferral: Write a formal letter to request the deferral and be sure to include your UofT Student Number and full contact information. You should briefly state your plans for the coming year, why you require a deferral and you must confirm that you will not be attending another post- secondary institution. My marks are good but not the top 5%. I applied for the Computer Science program and I intend to get an internship or an IT position in the year off to earn some money and get some experience. I am also doing a lot of programming projects to keep me busy since most of my friends are in university and work is boring.
Now… I have no idea or prior experience of writing deferral letters and I seriously don’t want to screw this up. Can anyone give me guidelines, advice or anything to help me out on this matter?

I don't know what your reasons are, but you should probably elaborate a little. It might even be worth saying that your parents won't pay and you are too young to get a federal student loan for the full amount because they assume your parents will pay x%. I haven't done the research but you should, my understanding is this is true.
Also, have you considered doing first year at a different university and transferring?
One paragraph should be sufficient, stating that you are requesting a deferral because of your current financial circumstances, that you plan on getting a full-time job to remedy the issue, and a confirmation that you will not be taking classes somewhere else during the next year. Bonus if you already have employment lined up.
Also, deferments aren't guaranteed--if you're requesting a deferment because of money issues, they definitely want to see that you have some plan for a remedy, like getting a full-time job somewhere.

You're making yourself a hassle, but in the UK people defer for lots of reasons, it's quite common to apply to uni, get a placement with a deferral, then go on a gap year travelling, so there's no need for the letter to be overly apologetic.
However, because you're deferring for a reason which puts your entire ability to attend in jeopardy, they will want to see evidence that your situation will change by the next year. Otherwise, if you don't have the ability to attend next year either, they've lost a place that could have been offered to a fully paying undergrad.
