I am on leave for two weeks and my parents want to take me out to do something fun. It could be anything from going to a gun range to eating at a restaurant. I was leaning towards a restaurant but it can't be anything too expensive or nice as I don't have anything besides t shirts and jeans to wear. Really any recommendations would be great as I having trouble deciding.
Hell's Kitchen for great breakfast downtown, should be easy to get to since the goddamn RNC is finally out of here. Pizza Nea in the NE is awesome casual authentic pizza. The Happy Gnome in St Paul will just barely make it for feeling comfortable in tshirts and jeans but its great. Town Hall Brewery has a lot of their own brews and a few other exotics and decent burgers/bar food. And the 5-8 club on S Cedar is also amazing burger basket style place that I would definitely take company to for casual get together style dinner.
There is multiple farmers markets daily, wends on East Bank Campus, thursday on Nicollette Mall, and everyday...at the farmer's market...place, you can find it online I'm sure you could hit. There is a lot of bike paths as well if you had something you could ride to see the areas around town.
Check and see if the twins are in town maybe and the Mall of America is really farking huge, bigger and more impressive than you could imagine if you've never seen it.
Also on university just a few blocks from the UM hockey rink and the football stadium construction is splatball, a painball place I know of.
I've only been here since late May really so thats about all I've got for you. That being said, bring a garmin or tom tom or you'll be hopelessly fucking lost every time you leave the house, the roadway naming conventions around here were made by satan himself and with all the construction around, you'll probably loop around so many times you'll feel like your on a friggin spirograph. good luck.

Dinkytown off of University is just fun to explore. There's a nice array of cafes and shops and you can catch a performance at Varsity Theater for pretty cheap ($10 or so usually.)

Dinkytown cant really be explored, it's like 3 blocks down uni and a block in either direction for those 3 blocks, you'd spend maybe an hour to 90 minutes looking at stuff and getting a meal (falafel buffet please) but thats about it.
I second the varsity theater though, they had flobots there a few weeks ago, they get surprisingly good groups there, not usually big names but good ones time to time.

Depending on where you hail from, a paper copy of the Onion might be an interesting novelty. Pick one up at pretty much anywhere in the cities.
If you are interested in enjoying some "Iced Cream," then the creamery is a must. And for bonus points it's on Grand Ave, which is one of the nicer walking neighborhoods in the cities. It's also one block form Summit Ave, in case looking at rediculously expensive and cool-looking houses is your thing.
I visited Minneapolis this summer. The Walker Art Museum, Minneapolis Institutes of Art and the Minneapolis Museum of Science are all lots of fun. The Mall of America is cheesy and touristy, but you have to go there if you have the chance. There's a fracking amusement park in the mall. It's all rather disorienting and overwhelming, but that's sort of the point.
Better (and cheaper) Greek food is at It's Greek To Me. Try their baked feta appetizer.
If you're looking for a decent place to just take your folks, I'd suggest the Minneapolis Institute of Arts. Then after (since it's free), hit one of the many great restaurants in the area (It's Greek To Me isn't too far away, Rainbow Chinese is right on Nicollet by the institute, and if you happen to be one of the seven people in the world who actually enjoy German food, the Black Forest Inn is nearby as well). The MIA is so much better than the Walker (except, of course, the sculpture garden at the Walker). They actually have art there, versus numerous paintings of brown canvas with a seemingly random orange stripe on it, which describes several pieces at the Walker.
If you're in the mood to enjoy a nice late summer afternoon outside, Uptown has a loop of trails around several lakes (Calhoun, Harriet, and Lake of the Isles) or Minnehaha Falls Park is a nice area to go check out. At Lake Harriet, there's a quaint rosegarden.
If you're looking at bars, there's a good number of spots worth checking out. As mentioned, Brit's Pub, off the Nicollet Mall, has lawn bowling on the roof. Also, there are some great brewpugs including Town Hall, The Herkimer, and Barley John's in a suburb called Mounds View (which has beer that absolutely destroys anything made by The Herk or Town Hall --- ask for The Dark Knight). None of those places are particularly expensive (Brit's is a bit more than the others).

Gopher football in town this weekend at the Metrodome - Twins in town until Thursday. You can get walk up tickets to both.
Will you be strictly in downtown Minneapolis or can you hit the suburbs? Get to Lake Minnetonka (30 minutes west of MSP) if you haven't been. Plenty of awesome places to eat on the water (Maynard's, Lord Fletcher's) and right next to Excelsior which is a nice town walk around in. Lots of shops, places to hang out and relax, all right on the lake.

I've been living in Dinkytown for a few years now, good place, once all the student kids are gone. Go to the Dinkytowner for some breakfast, or check out the 241's Tuesday and Sunday nights. Maybe I'll be working!

I second Como Zoo. Free, lots of amazing animals, especially if you are into primates. And there is a botanical gardens connected.
Otherwise, the mall of america is alright just for wandering around.

Also, Minneapolis is the second largest 'theater' city in USA. Lots of playings going on, some are really good.
(this is coming from a guy that doesn't like art of theater much).
It can be had pretty cheap, anywhere from $10 to $40 per art show/play per person.
Also concerts, rock bands or such (don't know if your parents would be into that though).
Downtown Minneapolis is Nice (Nicholett Mall); just to walk around.
Downtown Hopkins is nice too! Not as busy, but has an 'good old days' feel to it.
Minnesota also has TONS of very high quality camp sites and hiking trails/parks (if you are into that).
