depends on the bones. You can use beef bones in a stock similar to what you did with chicken. If they have a lot of marrow in them, you can roast them and then scoop the marrow out and eat it on toast. That's really good.
Ham hocks are good to add to a big pot of beans or split pea soup. You can basically add bones to anything that will be slow cooking to add more flavor, although you will typically want there to be some meat left on there. You won't get much flavor otherwise.

Technically, from a culinary standpoint, you just made chicken stock. Or rather, spice soup. Nothing wrong with drinking stock, but it's generally considered an ingredient for use in vegetable or chicken soups.
I've never heard of the toast thing, now I wand to try it.
home made stock is freakin delicious... if you have a slow cooker you can just throw stuff in it and let it cook for a while. I highly recommend throwing in some veg too to add depth to the flavour - celery, onion, and carrots are pretty standard. I usually toss in some italian seasoning, salt and pepper as well

Of course, but most people use bouillon cubes for the same purpose, because it's significantly faster without much difference in taste.
This is the best way to make split pea soup. You need some ham for the soup too but it's delicious.
