So mom was fixing some lasagna last night (a rather large meal, cooked in the same pan we do our Thanksgiving turkey in), and she made a slight miscalculation and now we have a gallon-sized plastic bag of spare lasagna noodles.
Any interesting ideas on how to prepare them? I want something other than just plain old slathering them in tomato sauce, cheese sauce, or butter.
make some sort of interesting stuffing, maybe a cheese/spinach stuffing since you already have lasagna, put the stuffing on one end of the noodle and roll it up, place in pan, pour some sauce over it, add some cheese, bake probably 25minutes in 350 degree oven and enjoy. pretty simple, might not be what you want, but its a way to use the noodles.

Yeah, Cannelloni. Look up some recipes for them. You could probably do Raviolli as well. Probably wouldn't be light enough for Michelen standard dining but would be serviceable I'd imagine.

My father made a nice thing out of cooked lasagna by cooking some beef broth, tomato chunks and wide sliced ribbons of lasagna in a pan, letting the tomato and broth cook down a bit to thicken it. I think he then put the noodles in and let them simmer for a short while to soak up the flavor before serving it. Was delicious, but it was also about 15 years ago, so I might be forgetting some of the stuff he put in it.
maybe you could cut them into strips, and try boiling them with beef or ham. my family does it with elbow macaroni, and it seems to be the only thing we can keep down when ill.
