Someone recently got me a nice black V-neck sweater from Gap. I have a pretty good fashion sense, I'd say, but something like this isn't really my style. What works best under such a garment? A plain white t-shirt looks a bit silly. Do I wear something with a collar?
depends on the cut of the v-neck. if its deep go collared shirt, if its a shallow one, then by all means an undershirt is fine, i prefer colors other than white myself
That cut seems pretty good for anything. Collared shirts always look good under sweaters like that, but it seems like a non-collared shirt would work alright too.
wear either a collared shirt or a deep crew neck shirt
avoid white where possible since the stark contrast of white and black can look too formal sometimes
avoid polo shirts (I know they have collars, but whatever collared shirt you wear should have a firm, solid collar, not a wimpy floppy one)
avoid v-neck shirts
avoid square-neck shirts
depending on your skin tone, certain colors will work better than others, but you have a variety of options as the sweater itself is black
when wearing a collared shirt, keep it button loose and natural, not right up to the neck; the v-neck of the sweater is placed so that you should only have one buttoned button visible above the neck... maybe two at the absolute most... more than that and it can look a bit too old-fashioned and less relaxed

I guess it is like this one but completely black: http://www.gap.com/browse/product.do?cid=38658&pid=461201
It has a pretty deep cut, goes down to the second or third button on the button-ups I have.

You could try a nice dark green crew neck shirt.
.. I just can't imagine collar necks looking good with a V.
