Restaurant veggie question

So just curious...when I'm buying stir-fry type food at a restaurant, what exactly are those veggies? I've looked around on the internet and can't find anything. I'm talking about places like Edo Japan that have just carrots, broccoli, and cabbage, I assume?

Anyways, silly question, but I'm honestly curious.

Carrots, red and green pepper, onion, cabbage, broccoli, bean sprouts, etc it really depends on the chef and what they have on hand. Are you looking to make your own?

Carrots, peas (individual or whole pods), the rest of the pepper rainbow, celery ...

Pretty much any vegetable can go in a stir-fry.
