It's going to vary slightly depending on where you live, Texas in particular having a sales tax of .0825.
Unless sales tax isn't included for services. Haven't ever checked my bill for that.
Check your past bills and see just how much text/talk.
For example when i first got my iphone I thought I would talk a lot more than I do. And because its so easy to text I ended up using more texts than i thought i would in place of phone calls.
Just want to echo Limp moose here....you may want to consider trying out an unlimited text/IM addon first before you spring for the unlimited everything - my wife and I have an ATT voice plan w/500 anytime and 5000 night+weekend minutes, and then I have unlimited text/IM/data on my Blackberry.
Just looked at (for example) the current usage for the month - only 37 anytime and 30 weekend minutes used for the month so far, but 1631 text messages via AIM. With ATT at least, the unlimited messaging addon is only an extra $20 per month I believe.

Unlimited everything, 450 anytime minutes, 5000 nights/weekends, with rollover.
initial 3G plan is 70 a month, plus 20 for the texting, and about ten percent taxes/fees
