There's a bunch of recipes around. I make one with cottage cheese (put it in the blender to take the lumps out) because it's lighter and fluffier than one made with cream cheese. The fact that cheesecake is actually custard pie (watch the Good Eats ep) is the key to making whatever recipe you choose turn out well.
My recipe is from the Joy of Cooking. If you don't pick which recipe you're going to use by this evening, I could drop it in here tonight when I get home.
My cheesecake recipe uses ricotta, and it's lovely. If I can dig it up I'll post it.

Cheesecake is awesome because it requires no baking. I'll get you a recipe for a cheesecake I make every Christmas when I get home. It's deadly. Sooooo rich, it's like flicking on the diabetus switch.

Look, I like eating cream cheese as much as the next guy, but a proper cheesecake should be one that requires baking. No way to get the eggs to set otherwise. And w/o eggs, it's not a cheesecake ;D

I had seen that episode but its been a long time ( love Alton ).
I mean i have a couple of cheesecake recipies, but they arent spectacular. Im looking for the kind that makes you tingle when you eat it. Like its so good you just cant help yourself to have more.
So what i need i guess is a breakdown of crusts, fillings, and toppings. Im thinking about going with my personal fave topping ( cherries ). The filling is probably the most important thing.
I am so totally open to unusual toppings. Just no peanuts or coconut...
The thing is, im going to try and make every recipe i can, and what i dont use i am going to send up with my mom to her work.

That's tough, because faves are pretty broad. For example, my wife and I prefer cheesecake in a regular pie crust. I also prefer mine with no toppings, while she demands some fruit on top.
I also prefer plain cheesecake to one with filling or a fruit/syrup swirled into it. They make it too sweet for my tastes.
Unless you can ask this guy what his favorite cheesecake is prior to making it, you probably want to make your favorite so that even if it's no his favorite, your enthusiasm for it will probably make it taste better for him ;D
We made cheesecake for some friends about a month ago, only to discover they didn't like cheesecake. At least we had fun eating it ;D
The best cheesecake I've ever eaten was a tiramisu cheesecake - I'm quite sure that I nearly died, it was so good. I unfortunately don't have a recipe, however from reading your posts it seems like you could determine a good tiramisu recipe from a bad one in a search if you feel like trying it.
I actually use the recipe from the magi bullet brochure. It takes about 30-45 seconds to mix it up and dump it in the crust. Then you cook it. Dump the topping of your choice (mmmmmmmm.....cherrrrries....) and let it cool.
Filling:
500g ricotta cheese OR 250g ricotta &250g quark if you want a lower fat option
250g white chocolate, broken into squares
raspberries or strawberries to serve
20cm tin, loose base if possible or foil type if necessary
Method:
1. Crush digestive biscuits in a bag with rolling pin
2. Melt margarine in pan and stir in biscuit crumbs, press mixture into base of tin, place into fridge to firm up while filling is made
3. Melt chocolate over pan of boiling water
4. Stir in ricotta/quark cheese and mix well, spoon over base and level
5. Place raspberries/strawberries on the cake as desired
6. Place in fridge for approx 4 hours

If you want to make a berry cheesecake, some jam/jelly of the chosen fruit in addition to the fresh fruit will give you a lovely replacement for just plain sugar. Do use the fresh, for sure, but add some jam too.
Thats all I have to say though, looks like you have plenty of great advice here already.
