Where shall I go on holiday?

Starting to think about where I fancy going on holiday so I can pick up some cheap flights.
I'm thinking Europe, but last year covered most of central Europe when I went interrailing (which I'd highly recomend!). I'd like to do something similar again, however I'm not sure where! I know I want to avoid the Euro zone as the pound is worth very little, so that narowed my ideas down to:
-Poland (Krakow, Warsaw)
-Balkans
-Former Yugoslavic states
-Bulgaria, Romania
-Revisiting Prague, Budapest exploring those countries more
Anyone had an experience with any of those or somewhere else to suggest?
