I say it every time a thread like this pops up, but different people have different tastes, regardless of their genitals. My girlfriend won't play anything that doesn't start IMMEDIATELY and basically involve bathing in blood. One of my friends will not play anything that follows multiple characters. Only third-person action games or adventure games.
I can put one thing forward if it helps. She's from a family of "country" folk. She came out fine.
I met her family bowling one night. One time thing.
The ratio of difference between them seem to be [Family] = Munsters [Coworker] = Marilyn Munster with the associated humor tolerance and weirdness appreciation. Actually if World of Goo was on 360 I'd suggest that immediately.

Unfortunately there really isn't much for the girlfriend to play on the 360. If she had bought him a PS3 the only game he'd ever need is LBP and they'd be playing that all day.

I second Beautiful Katamari. My GF played the hell out of We Katamari on the PS2.
Also, anything with simple game play mechanics. Not that girls can't handle complex control setups, of course, but if she's new to games in general you want something very accessible with clearly defined goals. Keep the frustration down as low as possible.

I actually recommend against playing a game together to start with. More than likely she isn't going to play the way you want her to (he wants her to?) and you'll find yourself with some awkward conflicts.
Introduce her into gaming first, co-oping later.
Hell, even though my wife is awesome at Halo, we still get into arguements when it comes to certain things. We never seem to be able to finish Tsavo Highway together, and I'll grow fruit out my butt before we ever win a round of Rocket Race together.
All girls like Tetris. It's pretty much the universal game. Maybe you could get her into Lumines and Poker Smash as well. Girls (and some guys apparently) like playing with doll houses, and the Sims 2 is BC so there's that.
Co-op usually goes over pretty well with the ladies so she may go for some EDF 2017 or Gears of War if she's into action games.
Then there's the XBLA board and card games, like Uno, Carcassone, Ticket to Ride, Domino Master, and Texas Hold Em. XBLA in general is a pretty good starting place for women or people who don't care for the hardcore shooters and action games that make up the bulk of the 360 library.
Eternal Sonata isn't the best RPG but it looks beautiful and isn't too long, plus you can play it co-op IIRC so that might be something they can play together.

Actually, if you can find an FPS that lets you adjust the sensitivity of the right-stick axes, you can probably crank down the Y-axis and make things easier.

Viva Pinata might not be such a good game for, essentially, a first time gamer. The game is basically a giant To Do list, and the first half hour or so can be brutal on someone not used to gaming. Hell, I was surprised at how much random crap it throws at you in that first hour, and my fiance was turned off of it entirely. We do play it together, though. I tend to the gaming part of it, and she takes care of the naming, outfitting, and keeping me from randomly beating the trouble making pinatas with the shovel aspects.
Honestly, Scene It is the safest bet I've seen mentioned so far, alongside Uno.
Mine loved both Braid and Portal (hell, she'll probably read this later..) and is working through Condemned 2 and Mirror's Edge, also wants to play Dead Space.
She may be the exception with some of those, though..

The only 360 game my wife really likes so far is Left 4 Dead.
Left 4 Dead was a big hit with my wife, too. She just doesn't play single player games. Luckily, she loves shooters in co-op. You probably have it already, but the first Gears of War was another winner (better than the second in our opinion).
I have a question for people who recommend Rock Band. Is it a good game for 2 people, or do you need a full group? I've never tried any of the rhythm games before, but it seems like something that my wife would like.
