I used to work in a kitchen which made tofu chocolate dream pies for vegans. You might not even know if no one told you it was tofu. Also it is incredibly easy to make.
I'm not a vegan but sometimes I like to expand my pie horizons. The sky is the limit when it come to delicious pie.
Would fish pie be any good? My gut is saying no, but that's because I don't really like fish. I do like pie.

maybe if the pie crust was like a spring roll type crust and the fillings consisted of fish and maybe some sweet-spicy sauce with vegetables and stuff. I could see that being good

If you don't like fish, I'm betting you won't like fish pie!
But seriously, in my opinion fish pie is an okay thing... the problem I seemed to have with it (back when I ate fish) was that the choice of seafood and broth was difficult to do well. I am of the opinion that cream sauces are too heavy for most flaky fish, and that was what always ended up being the constituent parts of the fish pies I saw.

I think actual soup would be just this side of too watery, and would destroy delicious flaky pie crusts. But I mean, you could probably still make a green onion and mushroom filling using the chicken-pot-pie model. And prebaking the crust would help.

You can get soup dumplings
The soup is pre made and frozen, then the dumpling is formed around the frozen soup
and then the whole dumpling is steamed
and while the dumpling firms up and becomes strong, the soup melts inside and is hot by the time you eat it by biting a hole in the top and sucking the soup out.
