Tracking Rogue Process

Occasionally the current window of an app I'm using (firefox, openoffice writer, etc) locks up for a few seconds while I'm doing something (foobar2000 usually keeps playing on despite this without any sort of skipping, chopping or pausing if it's open), then unlocks and behaves as though nothing happened. By the time I can whip Task Manager open to check it out however, the lock's over. I'm fairly confident that it's not virus or spyware related, but I do think that it's worth warranting some investigation. Is there a good task manager like utility that will allow me to track process CPU utilization over time rather than at the current moment so I can take a look at a pattern what apps might be going nuts, and if so, where can I get it?
