Ripping media

I'm adding some media server functionality to my computer. I have yet to start ripping stuff due to a defective drive that's still in the middle of an RMA.

What's the best format for me to rip video and audio to? I want to be able to play on as many formats as possible with the best quality possible--I have Linux/Windows (on the computer holding the media) and OS X (on my laptop). I also have an iPod Touch. I'm planning on using Handbrake for ripping video, but I'm not sure what the best program for ripping audio would be (I've heard good things about Audacity).

    I use CDex for my CD ripping, which is what I assume you're talking about. I normally just rip them to 192 mp3, but that's still higher than what most people do (I think they do 128 for space).
