Im in speech communication class as part of a required course for my program, and our last speech of the course is supposed to be an entertaining topic, 3-6 minutes in length. Problem is I cannot think of any decent topics that i can talk about. People have done a multitude of topics ranging from reading a story or poem, to roasting someone in the class. Im trying to aim for a topic that requires little to no research and can be easily written. Any ideas?

What do you find entertaining? Pick a topic, think of personal anecdotes or stories you have heard that entertain you about that topic. Write them down. Speak them out loud.

And seriously, in speech class content matters far less than delivery.
Give a speech on the psychological disorders of your favorite Arrested Development character. My friend wrote an abnormal psych paper on Tobias, with youtube clips embedded.
You should do a powerpoint with clips and screenshots of the cutoffs.
I pitched the idea of "How to commit suicide" to my professor, wherein I would cover writing your note, getting your things in order, making sure everything really is that bad, and choosing how to do it.
At the end I would have killed myself (taking "pills" washed down with "vodka" throughout the entire thing) and my conclusion would be in my suicide note. He turned it down, but maybe it will work for you.
A friend was on a forensics (?/speech giving) team, and the favorite one he saw in competition was a speech on how people never notice things happening around them. All the while he had rigged a series of hot dogs to slowly drop from his open fly.
Little to no research and easily written is subjective. Don't be lazy, but yes, don't choose something you don't know a damned thing about.

as much as I don't agree with the subject matter, I bet it was a pretty decent and wellrounded paper/speech.
The suicide one? Nah, he didn't go for it. I don't think he even got it, because his suggested alternative was a speech on how to plan a funeral. He also turned down how to make a sandwich. Even though I was going to include graphs and everything.

I had a public speaking class and ended up doing 'The Orderly and Proper Tying of Shoes'
It went something like "First, check to be sure that your feet are bare and in need of shoeing."
I would speak about something you know the most about, so that you have to do little research and you are already comfortable with the topic.
So, whats your favorite hobby? Speak about that; both the positives and negatives of said hobby.
I had a required speech class where I did this. Granted I didn't care for the class and was going through the motions. Speak several minutes on any topic.
I chose the proper golf stance. I could speak for hours on stance, swing mechanics, etc... but that is just because I enjoy golf and have put in my time over the years to learn everything. The point is that when you choose something you know well and like you don't even need to prepare. Now if this class is important for you then yes, preparing can drastically improve the quality of your speech and would want to do so.
Either way choose something that comes easy to you as you'll not be short on material.
