Looking for a tasty grilled chicken recipe, with extras

Alright, so I'm cooking dinner for the new girlfriend this Friday, and am looking for recipe suggestions for something kind of special.

I'm thinking something in the grilled chicken vein, with a home-made steamed veggie medly on the side.

Anyone have an old favorite along those lines?

    Mango Salsa....
    1 1/2 cups fresh mango, finely diced (frozen is ok too)
    1 1/2 cups fresh pineapple, finely diced
    1/2 cup fresh cilantro, chopped
    1/2 cup red pepper, diced
    1/2 cup red onion, minced
    1 teaspoon fresh lime juice
    1 tablespoon light olive oil

    And for desert... grilled pineapple rings with some icecream....

    Roasted instead of grilled, but this is a great and easy chicken recipe that I like making:

    Man, I swear I read that as a tasty grilled cheese recipe.

    And then the date had me... o_O

    I made some BBQ chicken recently, and it was pretty killer.

    I marinated it in soy, pepper, lil' bit o worchestire, and some orange juice. For as long as you can.

    Then grill like normal, and put the Barbeque sauce ona little bit before its done (about 5-10 minutes so it doesn't char) I used whole chicken pieces but it would be good w/ breasts

    for sides, potatoes, cubed w/ olive oil and onions salt and pepper made into foil "packets" and grilled.

    Asparagus in the oven with salt and pepper.

    I've been using this dry rub on everything I've grilled/smoked for the past 3 weeks. I cannot take credit for it; it's Bobby Flay's. Warning: it's spicy, it's got some good heat eventhough I was sure to remove the seeds from the Pasilla and Chili Arbol.


    1 T. (each) - ground cinnamon, Ancho chili powder, Pasilla chili powder, ground cumin, ground coriander, Kosher salt, coarse ground peppercorns

    1 t. (each) - garlic powder, onion powder, ground ginger, ground clove, ground fennel seed, ground allspice, chili de arbol powder

    2 T. - brown sugar

    1/2 t. - cayenne

    This ones in the oven, but you could adapt it to grilled, I would think, just put it in foil.

    Stuffed chicken breast.

    Get some boneless, skinless chicken breasts. Pound them out to flatten them out. In a bowl, put some fancy cheese (brie, havarte, gouda, feta,), chopped onions, celery, peppers, garlic and mushrooms with some olive oil and a dash of parsley and sea salt. Mix that up, put in the middle of the flattened chicken breasts, and fold them back together (use a toothpick to keep the two sides in place. Put them in a baking pan (put some olive oil on the bottom if you desire), throw some bread crumbs (the kind you buy in the store in a can) on the sides and top, put it in a preheated oven at 375 for @40 minutes.

    Its really easy to make and tastes great. Plus you can put pretty much anything you want in there, if you don't like peppers, mushrooms, ect.

    Add a salad or some steamed green beans with some bread to complete the meal.

    I kid you not. The best piece of grilled chicken I've had in all my years? Just salt and pepper, skin on breast.

    The most important thing to making this taste good, though, is making sure your grill is properly seasoned and heated. So let it get super hot, brush some olive oil on it. Then cook the seasoned chicken breast.

    My most favorite grilled chicken involves dousing it in greek (with feta + oregano) salad dressing while cooking.

    you can do a houli-houli chicken. i recomend grilling with indirect heat. it makes it super moist and tasty

    chicken souvlaki...

    take chicken (boneless skinless is easiest, thighs or breast will work), cut it up into pieces about two bite sizes big. Marinate for at least 2 hours (I use Mediterranean salad dressing plus extra lemon juice, because I'm a lemon nut)
    Soak some wooden skewers in water while your meat marinates
    Chop up misc veggies into largish pieces that you can skewer. I use sweet peppers, cherry tomatoes (no cutting involved), onion chunks, zucchini and mushroom.
    Put veggies and meat onto sticks. Bake for 20-25min at 350F, or grill.

    Serve with rice or rice pilaf

    When I grill chicken I mix up melted butter, vinegar, salt, pepper and a bit of water and brush it on constantly throughout the grilling process. Makes for damn fine, damn easy chicken that if you've done it right, has no burnt edges and is, like the Matrix, going to tell your brain it's juicy and delicious!
