My girlfriend is coming up for the summer, so I am thinking of getting a gaming system and a bunch of games for us to play. My first instinct is to get a WII - but I am not sure. I am thinking of games that would be fun - like kinda scary things with Zombies (Res Evil?), or coop team play (Sangoku Mushou?), or party games (Mario Party / Kart?)...
You have RE5 and Gears are great co op games. Not to mention access to netflix for renting movies.
The Wii is nice if you aren't looking to spend all that much.
You can pick up several arcade style shooters that are fun to play co op such house of the dead and the RE arcade shooter. Not to mention brawl, mario kart etc.
Still, the 360 is a better choice for the rest of the year when you are by your lonesome
The Wii has quite a few decent single-player games as well if you're not put off by... happier graphics
Mario Kart, Mario Galaxy and House of the Dead : Overkill seem to be the games my girlfriend most enjoys on it.
My experience with non-gamers is none of them have near the required reflex to do the dodging required in RE: Umbrella Chronicles. They will fail every single time, and because both players need to succeed to dodge, it increases the difficulty by a lot. The rest of the game is fun for coop though.
All the 3 systems have good coop games. Here are some highlights:
Wii
Boom Blox - Physics puzzle game, great multiplayer coop and verses modes
Mario Galaxy - It has a sort of "sidekick" mode, not proper coop, but more interactive than just watching someone else play.
Metal Slug Anthology - All of the Metal Slug games, which are all 2 player coop
360
N+ - Intense precise, very good 2D platformer, with a very good fun coop mode.
Castle Crashers - Scrolling beat em up with rpg lite elements. Up to for players on one screen.
Gears of War 1 + 2 - Third Person shooter, and both have split screen coop.
Halo 3 - Has split screen coop.
Left 4 Dead - Has split screen coop, and you can go online too.
PS3
Pixeljunk Monsters - Tower Defence game. A lot of fun, and has 2 player coop.
Little Big Planet - User Generated platformer.
Multiplatform, there are the Guitar Hero/Rock Band games, and the LEGO Star Wars/Indianna Jones/Batman games and Resident Evil 5.
Yeah, there are a ton of great co-op 360 games. Tons of shmups (Heavy Weapon's probably best for co-op along with Geo Wars 2), tons of FPS and TPS (EDF! RE5! Gears 1-2!) as well as miscellaneous fun games like Bomberman & Scene It.
But really, all 3 systems have good multiplayer options so get whatever you want.
Wii is the way to go, plenty of fun to be had there for both of you. Mario Galaxy has a great girlfriend mode. Wii Fit is good, all of the Rabbids games are good in spite of what anybody else tells you. The Wii won't take over your life, but it will give you fun for an hour here and there when you want it.
If you pick up a 360, I highly recommend downloading Geometry Wars: Retro Evolved 2. It's got really cool local multiplayer.
As most people have already stated, be sure to get Gears of War 1+2, Castle Crashers, and Halo 3 if you do get the 360.
If you get a Wii, I do recommend Mario Kart Wii since it's really fun to play with another person and if you're into arcade light gun games, there's the House of the Dead games and RE: Umbrella Chronicles (I only got to try out one of the House of the Dead titles and have yet to play RE:UC).
It's worth noting that you can also get Geometry Wars multiplayer for Wii in the form of Geometry Wars Galaxies. Though from what I've heard, you'll want to use Gamecube controllers for the optimal experience.
My vote is also for the Wii. My wife and I play the following (all highly recommended):

Raving Rabbids (especially TV party with the balance board)
We haven't played Dokapon Kingdom yet, but that looks like it might be OK too.
She also really likes the Everybody Votes channel (not a game, but she likes the short diversion). And she also loves Pikmin (although that is single player).
In all likelihood you could not go wrong with a Wii, Boom Blox and Mario Kart. Great stuff!

If she's new to platformers, I can vouche for Crash bandicoot and Death Jr for the Wii. They both have ways to allow a significantly weaker player to still have fun with out killing the game for the other person and my wife loves Death Jr since its cartoony and strange. Highly recommend either of them for beginners to learn on, then you can move up to some Mario Galaxy or even a FPS (death jr is like a mini-fps but I find I do melee attacks more since they are much more powerful).

I say, go for whichever console you want the most, all 3 offer good coop experiances, and the PS3/360 have a massive overlap anyway.
