The suggestion of getting him a game and playing it all day with him...it's nice, but assume the worst, he hates the game. that is always a risk, also, that might be a regular Saturday for them anyway, who knows.
Cooking sounds like a solid idea. Can't go wrong with that, unless I end up setting the kitchen on fire...again...
Laser tag or paintball sound good but he's not what you'd call an "active" person. Honestly how he sits on his ass all day and is still in good shape is beyond me, haha.

And as for cooking my experience ranges over pizza pinrolls, spaghetti and meatballs, lasagna, and pancakes. And that's about it.

For the cooking, we can work with something here. Make something fancy, something you've never made before (stick with the Italian though). For example:
Entree -> Bruschetta on home made french bread (I can give you a good recipe for that...if you're up for it)
Main -> Pasta Carbonara
Dessert -> Tiramisu (if you can get Irish cream)
Another option is home made Pizza, it's massive fun to do together. Make some appetizers though, as it may take some time from start to finish (about 45 minutes).

Hmmm, London will have a few...any decent sized city should have at least one. On the other hand.....do you know a 'mom and pop' type pizza restaurant? Call them, explain the situation, offer to pay a bit extra...go there, mull it over (i.e. they should be enthusiastic for it as well!) and maybe they can help out?

But if you're already decided on home pizza making, first off: good choice.
Secondly, for the day up until that point, I would heartily suggest something out of doors. Theme park would be a good choice. You get an amazingly fun day, but without having to move around a lot yourself, which should suit Ryan, since you said he wasn't very active.

The thing I have against games is that it seems hit and miss....besides, you're hanging on a gaming forum, so I assume you game too.
How about paintballing or lasergaming (with a bunch of friends)?
For a gift, a game would be the golden standard, but if he 'needs' anything else, that would work too (keyboard, mouse).
