Traveling Cheaply in Europe

So the boyfriend and I are eager to get out of Canada for a while and were looking for interesting, budget-friendly places to visit in Europe. I know Eastern Europe is cheaper in general, but some specifics would be nice. We'd probably go next summer, as we need to save up a fair bit just to afford airfare, hostels (preferably with private rooms), etc. I know traveling in non prime tourist times (so not June - August, right?) is best... May might work, but we're in school from September to mid May, so that limits us a bit.

We're not really clubbing types (nor are we huge drinkers/socialites), though I like to go dancing occasionally. We're also not big hiking/wilderness types. Interesting architecture, art, food, museums, etc are most important.

Any ideas?

    Prague was incredible. My friend and I stayed in a B&B for what was equal to about $12 USD a night. Travel was super cheap and since they haven't switched to the Euro yet the exchange rate is excellent. The Kafka museum there was fantastic.

    I'd try and go in late May/June; many European schools finish a little later than American schools, so you may find it cheaper/fewer people around then.

    In general, look at capital cities; they'll offer the most in terms of museums/architecture/art and will have more accommodation choices, too. There'll be plenty to do and see.

    I've not been to many places in Eastern Europe but my family were really impressed with Budapest, (I also liked Prague; it's not nearly as cheap as it was, though) and Krakow and you should be able to travel cheaply by train in between cities. Don't even consider Scandinavia; it is ridiculously expensive. (By the way, if you do go to Prague, you must eat at Bar Bar; the savoury sour cabbage pancakes were so good).
