I just went 'HD' with my 360, and have it hooked up to my TV via a standard HDMI cable.
What I would like to try and do, if possible, is to get the sound through speakers, via a 'Stereo/DVD entertainment system' I have.
What would I need to do? The TV has all the ports you'd expect, couple of scarts and the Yellow/White/Red ports, S-Video, as well as the red/green/blue etc. The stereo has alot of ports on it; a scart output, 2 speaker ports, an S-video out, audio out (white + red) and an optical coaxial. The size of the AV cable packaged with the 360 means I can't plug it into the console at the same time as a HDMI cable, though.
It's possible to plug in both cables at the same time, but you have to remove the plastic housing from the part of the AV cable that plugs into the 360. I had to do that to mine. All you need is a screwdriver or a knife to pry the two halves apart.

Can't get sound to the speakers with this stereo at all, as it stands. Using a headphone to audio cable (red + white) doesn't seem to work, whichever way it's plugged in (Apologies for not knowing the correct terms).
I think it's just the stereo model, and the fact that it's also a DVD player with a scart output, but I can't get any sound from the TV, using the headphone port on the TV and going into the stereo, or vice versa. I'll try another standard stereo later on, I guess. I've never had so many ports and combinations to try.

The ideal would be to run the HDMI to your Receiver, and then from there to the TV, but barring that, perhaps it might be better off for you to get the R/G/B connector for the 360 and just use the Optical out for your Surround Sound system.
Are you sure that your TV doesn't have any audio outs (ideally optical audio out)? My TV is newer (and better) than my receiver, so I run all my HDMI cables into the TV and then configure the TV to output all sound through the optical cable into my receiver, and from there to my speakers.
