Which books have you read, and what kinds of stories are you looking for?
It's been a good long while since I was really into EU books, but from what I can remember, the X-Wing series is good (and extensive with like 9 books or something). If you're looking for action writ large, you can't go wrong with the first X-Wing books. And Corran Horn is pretty much my favourite EU character ever. Which brings me to I, Jedi. Without a doubt, that's my favourite EU book. It's quite different from all the others as it revolves around a very personal journey, but I thought that Stackpole did a great job getting the reader into Corran's head and life.
If you want something fun and lighthearted, go for any of the books by Aaron Allston. His rendition of Janson is a hoot.
Don't read Kevil J. Anderson's Jedi Academy Trilogy. It sucks. The pre-ANH Han Solo Trilogy isn't bad iirc.
I think the concensus is that Zahn + X-Wing series are all that are worth paying money for.
The Han Solo books are good but I didn't finish all of them.
I didn't think Truce at Bakura was that bad, thats the first novel. It has a cool (not the empire) bad guy and appends right to Return of the Jedi. Then I haven't read it since the 6th grade though.
I can't remember each title specifically, but I would strongly recommend against the New Jedi Order series.
What? That's garbage. Some of the books are iffy there, but a lot of them are really fucking good. Star by Star and Traitor being two examples.
I highly recommend I, Jedi. You might have to read the Jedi Academy trilogy to completely understand it and some people in this thread will tell you they are terrible books. While they aren't as good as the Thrawn books, they are pretty necessary reading if you plan to read a good deal of the EU.
There are far, far worse books. I'm sure someone else will list them.

That book and Splinter of the Mind's Eye suck so bad it creates a vacuum of pure suckage.

A good prequel book is the Episode III book (much better than the movie imo), and the book following it: "Dark Lord: Rise of Darth Vader."
Shatterpoint is a very good Clone Wars novel. I haven't read Karen Traviss' stuff yet, but Tycho speaks highly of them. She wrote Hard Target (Boba Fett I believe) and she either did one or both of the Clone Trooper Commando novels. I'd say NJO isn't so bad, especially if you're a Star Wars fan.
