Just looking at the stills is making me cringe with how underdone those burgers are.
I'm guessing they used some high quality beef that they ground themselves so they know it's good.
But those are entirely too red for my taste.

I'm guessing they used some high quality beef that they ground themselves so they know it's good.
But those are entirely too red for my taste.
oh I'll be taking it to a higher internal temperature than he does, and he specifies in the video that he's cooking to his preference and the technique will work just as well for people who want it more done
the trick is he's cooking a whole log of ground beef sous vide (wrapped/packed a specific way), and then slicing it into burgers and searing. That means you can have the burger as thick as you'd like, cooked consistently the whole way through, and still get a proper crust on the outside
