Best you can do is know your rights, accept what you did wrong, "yes sir/no sir/ma'am" your way through it, tell'em good day, and go on about your business until you mail off the check to the court or show up to court and hope the cop don't show.
My dad loves court dates. He gets paid to show up and generally speaking they never even call him to the stand.
His favourite story was one time a lawyer was trying to get a client out of a DUI, and after being called to the stand and explaining the events of the night in question, the lawyer started grilling him on the breathalyzer. After satisfactorily answering all his questions, the lawyer decided to get nasty and said 'well, as a police officer, exactly what makes you qualified to understand the functionality of a breathalyzer?'
And my dad, without skipping a beat, replied 'I assumed it was my Bachelor's degree in organic chemistry, but if you have a better explanation I'd love to hear it.' He said it was the only time this guy had ever been rendered speechless.
Moral of the story: Never assume a cop is a cop because they're not educated enough to do anything else.
