What is it with the sciences and teaching stuff that has been proven pretty convincingly wrong.

Because, while wrong, those works had a huge impact on later works in that area, and without studying the early works you won't fully understand the later ones, and where they came from.
Like in literature. The Bible is not a great book, but if you're studying literature and don't know anything about it, you're going to miss out on a shitload of allusions in Western writing. This is why high schools assign all those terrible books, not because the teachers think they're fun to read, but because they provide a framework for understanding modern writings.
Same thing with politics. I hated reading Plato, since i grew up in America where Locke had a huge influence on our independence and formation of government, and The Republic deifies government. But it was still good to learn it, as Plato's work was one of the first pieces of political science literature. Although i still feel it was just as telling of Plato's feelings towards his teacher's death. ("How dare you kill Socrates! You should have made him king!")
