Final Fantasy VII, NA. The first time I loved a box art, because it conveys the feel of the game perfectly - you are this guy right here, and you're about to take on some serious shit. It's the angle that does it.
A nice little mockup of what that rumored remake could look like.
I'll spoiler the whole post for V-scroll purposes.
Table of Contents, in case you just wanna' skip...
-Metal Gear (MSX)
-God Hand (PS2)
-Way of the Samurai 1 + 2 (PS2)
-Hitman Trilogy (PS2)
-Okami
-Resistance: Fall of man (PS3)
-Valkyria Chronicles (PS3)
I always liked the old Metal Gear cover. Apparently the guy who made it was instructed to make it look like that dude from Terminator (Michael Biehn).
Lots of awesome stuff on the PS2's already been listed, so I'll just throw out a few that stand out to me personally...
I think the cover for God Hand deserve a mention, not for any artistic merit but simply because that dude's head is getting punched off.
Win - NA/EU cover.
Fail - JP cover. NA wins! :^:
Looks like that shit hurts.
The Way of the Samurai games have nice clean, iconic covers...
And I may well be alone in this, but I always thought the Hitman PS2 trilogy had great cover design - always very clean, and the images give a real sense of the character's elegance and badassery.
Another example of the NA/PAL version being better than the JP - they kinda' gummed theirs up with superfluous gun porn.
(JP cover - fail)
These covers really capture the spirit of the games. I'm cold-as-ice and I'm comin' ta' gitcha'!
Also, Okami is worth a mention (always, in every conversation).
NA cover, not too shabby.
JP cover. Dig the tree and use of Ammy concept art!
On the current gen, I really like the covers for the first Resistance and Valkyria Chronicles, each for totally different reasons.
I think this one works for a lotta' reasons. The dominant Chimeran skull is alone a very striking image. Like the cover for Dead Space, it goes on to tell you everthing you need to know about the game: The era is WWII-ish, and there's crazy mutant/alien bastards to kill. That's all you need.
Valkyria
Valkyria Chronicles on the other hand I love just because of the blazing color of Sylvaria's hair and eyes against the ruddy brown of war, and the introduction of the two principle protagonists below.
The JP cover leans towards the Squad-ness of the game, but compared to the NA cover it doesn't begin to really stand out. The title is better, sure, but a happy-to-be-together bunch of anime-lookin' warriors on the cover of a game? Been there, done that to death. The dominant image of Sylvaria on the NA cover gets it the win from me.
Chance on
'Chance, you are the best kind of whore.' -Henroid
About the MGS3 cover art, I honestly think it is superior to the other version. I think it very nicely shows off the new camo system, and captures the Cold War vibe.
One of Panzer Dragoon's major artistic influences was Moebius' (Jean Giraud) Arzach, a comic book series created by the French artist. He even contributed in the creative process of Team Andromeda's game with original artwork.
So the US version got rid of Moebius artwork in favor of....girl with gun on dragon in polygons
Actually, that's the EU art. I can tell by the black sidebar.
US Saturn games have a white one.
Okay, still a loss.

In cover art fail, I have the Wii version of Okami - complete with IGN watermark.
I remember seeing a badass version of RE4 - stark black and white forest with the sillhouette of the Doctor and chainsaw...
I also have to say Crisis Core has great cover art. So much so that I got the guys at Square-Enix EU to get me a big, big ass version of it for my gaming room:

Replace them with FF stuff.

You win the thread. I was coming in here specifically to post that, but you beat me to it.
And just so people don't miss it
Best cover art ever.
Edit: ignore that, for some reason thought this thread was game covers you think are totally awesome. Carry on.

Again - tells you everything you need to know. One space marine Vs. the legions of hell. :^:
Edit: huh. Never noticed that 2nd guy in the back. There goes my analysis.
[edit] It also gives me the strangest feeling of Deja Vu. Possible that I remember it from a gaming mag...
[edit 2] Oh god, it's like eyesex.
Co-op?
Holy crap, this guy is amazing. Every game that's set in space should license his art.
Awesome cover, and totally captures the feeling of the game too.
But hey, opinions.
Corporate persuasion through urban violence. super-win.
vs
US art wins!
It's also the original art, so huge props to Atlus USA for that. (Well, the Maniacs version is white, I believe.)
Digital Devil Saga 2 wins bigtime.
JP: (it might've been Sera instead of Seraph, but it was similar to this)
US:
And the greatest US boxarts ever:

It's red, but check the OP.
I saw the one in the OP - this is a different one. It's got a bunch of straight tree trunks in black and white.
Edit: Found it:
PAL boxart. We always get better Resi box art:
Awesome inside the spoiler
XBL/PSN/Steam: APZonerunner
Definitely one of my favorites, and the only collector's edition ever worth it's price.
It won't be popular here, but I really liked this one:
Switch: 6200-8149-0919 / Wii U: maximumzero / 3DS: 0860-3352-3335 / eBay Shop
I can't help but see that PS2 PAL RE4 coverart and chuckle at the complete lack of trees compared to the Cube cover. Very accurate. :P
Not trying to start a "zomg my version are gooder than urs!" arguement, just a humorous observation I thought I'd share.
JP:
US/PAL:
(the pal one is ever so slightly different; they just added a flame affect to the hand)
I like the JP one better. If they had gone for the original pic for the us/pal box though...
XBL/PSN/Steam: APZonerunner
I like the European art of Megaman 2 WAY better than the American or Japanese ones. They must have like Space Adventure Cobra a lot, as well.
Europe also made a good job on MM1:
