Opinions on all of the gundams. Well, the ones that have aired in the states at least.
Wing - Kinda awesome when you're 14. The dumbest fucking thing ever when you're an adult.
G Gundam - Somewhat different. Kinda dumb coming from the SERIOUS BUSINESS that was Wing. As an adult, its still dumb, but also AWESOME.
00 - First season is legitimately one of the better alternate universe shows. Second season just kinda ignores everything that made S1 good. The movie is.. uhh.. We don't talk about the movie.
Original - Dated look is kinda hard to get past. Some dumb/awesome designs, too. Still one of the best shows.
0080 - The kid is kinda annoying, but if you're not bawling at the end you have no soul. Also: refer to avatar.
0083 - Very pretty. The main characters are fucking horrible, though. Retcons the shit out of the timeline in a bad way, too.
08th MS Team - Also very pretty, really fun, and just fucking solid for all 11 episodes. Yep. 11 episodes.
SEED - Hm. The original but with even angstier, prettier teenagers. Not, that great, but not awful either, and it has some fun characters who frankly deserved better shows (Mwu). Fucking full of stock animation.

I concur with you for the most part, here are opinions on more gundams
Original: The movie compilations remain my favorite anime. Ever. Of all time. Over everything else. That said,
Zeta: This is the best Gundam series. Nuff said. The movie trilogy is worth checking out for the gorgeous new animation, but they changed the ending to make it not as good/not as depressing.
ZZ: Haven't actually seen it, don't really plan to. Worth checking out if you really like UC, I suppose.
Char's Counterattack: One of Gundam's highlights, a must-watch.
F91: It holds a special place in my heart but it's basically a series that got crammed into a movie.
Turn A: Regarded as Tomino's best, amazing design work by Syd Mead and soundtrack by Yoko Kanno, bu enhhehhhh I found it kind of problematic.
MS Igloo: Nice visuals if you get a hardon for robots like I do, otherwise pretty formulaic/not great

I've only seen like a quarter of Turn A, but I think just entirely on aesthetic grounds its one of my favorites. I only really stopped because they announced an NA release. Now I need to get back to it now that said release has been cancelled.
I haven't seen F91, but I've read Crossbone, which is pretty good, if tainted by some really fucking awful fanservice.
ZZ I hear is overall pretty awful, and has some pretty low lows, but when its good its actually pretty damn good. Its just too bad those parts are like maybe a fifth of the series.
Victory is apparently an over-dark, kinda ridiculous mess thats salvaged by having a really good protagonist and some pretty creative fight scenes.
the MSG movies plus Zeta are pretty much the high water mark of the franchise, though.
That said, I haven't really watched anything mecha more recent than, uhh... Macross Frontier?

I have a lot of investment in the UC universe and while sure the themes aren't too far from what's to be expected from Gundam, the writing is just really engaging and touch on some new things to help flesh out the world as it stands in the series' present as well as the past, like the first Spacenoid migration. For the most part the characters are nuanced and not like caricatures or rehashes of old archetypes. It's a love letter to the fans and a clarification on everything that UC Gundam is about and everything just feels fresh and exciting, in my opinion it's the best Gundam in decades.
To be quite honest, my favorite UC anything is 0083.
I just...do not like Banagher. I need to go back and rewatch what's been released of Unicorn back to back. Because as it stands, all the characters are super forgettable to me.

Eureka 7 I'm halfway through, Evangelion I think is historically important despite the hate it gets, RahXephon has been on my to-watch list for ages, Gun x Sword I'm not familiar with, I've heard good things about Escaflowne but have only seen about 2 episodes, though I have seen Dunbine and enjoyed it up until the ending.

I just mostly enjoy the animation itself in End of Evangelion at least. And Rebuild, some of that stuff is beautiful.
