I'm going to run through this and the sequel. I'm also eying Ikami (the wolf game).

Metal Gear Solid 2 Substance and Metal Gear Solid 3 Subsistence.
Grand Theft Auto Series (the last two are the best I think).
Katamari Damaci and We Katamari.
Shadow of the Colossus.
Guitar Hero.
A collection of the three Devil May Cry games recently came out. All three (special edition as well) for only 30 bucks. The first and third are down right amazing games. I don't think I'll even open the second game though ...
If you like RPGs, there's a truckload. Off the top of my head:

I recently got a PS2, and have snapped up a few games I've been eyeing and found cheap. The ones I've particuarly liked are Armoured Core 2, Gungriffon Blaze and Soul Calibur 3. All three are highly recommended. I've been wanting to pick up Melty Blood Act Cadenza, but with the PC version on the way I couldn't be bothered to blow money and time modding my PS2 to get past the (stupid and evil) region-locking.
I believe I remember somebody saying the game never finished it's beta stages.
I believe it. The game feels just.. wrong.. It feels like a completely differant game from the other two entirely.
I'm sure one rainy day I'll open her up and give it a second chance but... chances are... never.
Megaman X8 is pretty good. 2 levels are crap but they're over with pretty fast and the rest of the game is solid.
If you like RPG's, I recommend anything with Shin Megami Tensei, Digital Devil Saga, Devil Summoner, or Persona in its name. I'll also give a recommendation to Wild Arms 4. It's a fun game and I like the hex system. It does have a glitch though and you can't unlock everything without an AR so if that'll bug you, avoid the game.
If you haven't played it on the cube or don't have a cube, go buy RE4. I haven't played the PS2 version but it doesn't matter. It's RE4.
I'm behind all of what I see here, but I have to stress the Metal Gear Solid (MGS) series. MGS2 Substance might be hard to find, so MGS2: Sons of Liberty (the original) will do just fine.
Metal Gear Solid 3: Subsistence is reasonably new though, and has so much new content that I can't say the same for it - don't buy MGS3: Snake Eater if you can help it.
I seem to pretty much the only fan of it here, but I love the Jak & Daxter series. Jak & Daxter: The Precursor Legacy is a shaken mix of Super Mario and Crash Bandicoot.
Jak II and Jak 3 are completely different than the first. They're like Mario and Grand Theft Auto combined with a ton of great cut scenes and humor.
*sigh* was just going to make this thread. I found a futureshop with some silver PS2's.....those are awesome, and I want to buy one. I think I'm going to tomorrow. Probably going to pick up FFXII, and another, less "epic" game, maybe guitar hero. I dunno. I'll see what's there.
Yeah, I picked up a Silver Slim, it's nifty. Also, holy pin down a harpy and rip off it's wings, Batman! God of War (1) has everything, violence, sex and puzzle solving!
Speaking of PS2 Games, are Katamari Damacy and Rez considered hard to find now? I'm expanding my PS2 library [only picked one up in November] and I haven't found a copy of either.

I liked the Bun. It was garlic in flavour. But shit is still shit.
Burnout 3 is good, don't know about the newer ones.
I'm also a big fan of the Sly series.
