In-engine is just a way of saying that it was rendered using actual game assets and on the technology the game will run on.
Rather than it being, say, a CGI trailer. Like how Blizzard has done trailers using the WoW engine itself, or their big-deal CGI ones that are the opening cinematic for each expansion.
My favourite thing about the Grim Fandango news, is it means Disney aren't being stingy with the LucasArts IPs.

There's a video on the Double Fine Youtube where they talk a bit about the process. Basically once the Disney deal went through with LucasArts, Double Fine called Disney and told them "Look, we can make this a valuable brand again, and that will make us money, and that will make you MORE money."
Gotta assume that LucasArts didn't bother to take their calls for all these years.

Schafer has been candid for all these years about trying to get Grim Fandango back and begging the owners to do something with it or let him have it. I doubt he'd have an issue talking with LucasArts.

If they just say something is "in-engine," there is no actual character control or gameplay or real-time rendering going on, the movement is all pre-scripted and the models are pre-rendered.

Gameplay? Yeah, it's all in-engine, but if there is actually gameplay going on, they will label it "pre-alpha gameplay" or "captured from beta footage." Technically you could also label any gameplay "in-engine," but developers benefit from being clear when what you are seeing is actual gameplay.

Man I like Naughty Dog and there's no doubt UC4 looks pretty
But they've had a very linear visual progression in Uncharted and Last of Us and, yeah, that shit looks really good, but it's not exactly visually gripping in the same way as something like Yoshi's Woolly World or Kirby and the Rainbow Curse or the new Zelda, all of which make me go "what the hell is going on here"
I may just be salty about it, though, because I really expected it to be a Last Guardian trailer

The point is that the game looks really pretty in a way that made me think it wasn't running on Wii U hardware
