Subnautica is what I've been playing recently. They just did a graphics overhaul! This is the only screenshot I have, though, which doesn't show off the massive improvement they've done to surface effects and lighting, but it's my undersea habitat.
I have been eyeballin' this one lately
It's still very early access right now, and you can run out of stuff to do fairly quickly (Like, say, 6-10 hours of play, depending on how familiar you are with the topography).
However, they've made great strides in expanding the tech tree and also making it so that tech requires more work. The H20 update (Thursday's update) added the scanner. Now you can scan fish and other stuff to get information on what it can do for you (Such as relative nutrition, is stuff poisonous, that kind of stuff) as well as changing how tech is discovered. It used to be you would find fragments of stuff (Little white canisters) that would be, for example, named like "Seamoth fragment". You would pick it up, throw it in an analyzer and after some time you would be able to build the Seamoth.
Now you use the scanner and the fragments can't be picked up, but it takes 1-5 fragments. The seamoth is easy to get because the fragments are in the starting area, but the Moonpool, which is always my goal because it makes the Seamoth easier to maintain (Automatic recharging instead of having to make power cells) has fragments only in a the sparse reef area, which is not so easily found, and they're spread out so you have to spend time there to be able to research it.
The habitats have the corridors you can see in my screenshot, rooms, observatories and the moonpool as major structures. You can build the fabricator, workbench, storage inside as well as stuff like bulkheads to keep flooding from spreading or signs or stuff. There's a farming system in the works, but it's not available yet.
I'm hoping they add a reason to have multiple habitats because right now there's no real benefit to building a second one. It might be closer to a faraway biome for resource gathering, but then your stuff is split between two locations.
The game is gorgeous as hell, is genuinely claustrophobic when exploring deep caves and the big, dangerous Reaper Leviathan is terrifying.
Like, seriously, everytime I hear the distant roar of a Reaper my skin breaks out into goosebumps and basically turn around 180 degrees and leave the area.

Like, Subnautica pushes all the right open world/survival/crafting buttons for me. It's more fun that any other one I've tried, and I've tried a bunch of them.
I'm hoping the map becomes much, much, much bigger because right now it's pretty small, but they keep adding more stuff as time goes on.
