it's not down, the login server is just under heavy load. If you keep retrying you can get in eventually, I got in on my 3rd or 4th try, but it's probably going to get worse because it's launch day so maybe just play in offline mode today if you are having no luck with logging in.

The lesson is you don't have to fight everything and there are parts in the game where it might be easier to come back later

I'm currently having trouble with parrying enemies, I wonder if I stand too close to them, it seems like you have to parry the tip of their weapon?

I actually took him down my third try. All his attacks are super predictable, it's just a tedious fight because of the damage difference. He drops a titanite scale and 4000+ souls so it seems worth it though.
