Man no one ever wanted to play NSMB's multiplayer with me, which really sucked. It's basically what I've wanted ever since I played the first Mario Bros.
Most of the good single-cart games have been mentioned, but here's a few more:
Star Fox: Command: Multiplayer Star Fox deathmach! Metroid Prime: Hunters: Gimped, but still fun, multiplayer FPS deathmatch Metroid Prime: Pinball: Limited to one level, but still pretty fun (basically a score attack mode) Jump Superstars / Jump Ultimate Stars (import): Like Smash Bros., but anime. Limited choice of characters. Daigasso! Band Brothers (import): Music game. 1 cart = 8 players, and I believe it is stackable (2 carts = 16 players, etc) New Super Mario Bros.: I know this was already mentioned, but I think you can play the mini-games via single-cart.
It's worth noting that Bomberman (regular ol' Bomberman, not Bomberman Land Touch) also has 8-player multi, and will be dirt cheap if you can find it (I got it for $15 new more than a year ago).
Also, what games are very average and skip-able, but the inclusion of single-cart multiplayer makes it worth playing?
For example I know first hand that Bomber-man touch's single player, that is the actual touch stuff, is downright awful. The multiplayer inclusion is it's saving grace.

Well there's also the Ubi-published "Bomberman DS" which preceded Touch. It also supports 8 players single cart, and it should be super cheap bargain bin by now.
It's single player was straightforward traditional bomberman classic -- enter an arena, kill the enemies with bombs/powerups, exit through the door. Then every few levels there's a boss that you destroy.
The multiplayer is traditional, classic bomberman.
But Touch has it as well.
I have no idea which is the better game, but average reviews are higher for Touch. I think the Multiplayer single cart is the same on both I think.
I would honestly say that the Bomberman DS version, not Bomberman Land Touch!, is the better version for multiplayer. It has more options for weapons if I remember correctly. A huge variety of power ups, while Bomberman Land Touch! has a very small variety of power ups. Touch! does have wi-fi though.
Geometry Wars: Galaxies has a pretty robust singleplayer and has a very nice single cart feature IIRC.
Worms Open Warfare 2 has excellent single cart MP, if you're into worms.

I can't remember if Bleach had it or not. I seem to remember it did, it just took forever for the data to be sent. Might be something else.
Yeah, Bleach 1 & 2 has it. It takes around a minute and a half to two minutes to load. The 2nd chooses your teams for you which is a bit strange considering the first allowed you to pick for yourself. That maybe because of the larger character roster in the sequel though.

Why on earth has this not been released in the states. DS 8-player rock band, for crying out loud.
edit: They should strike a deal with Vicarious Visions and Red Octane to release a version compatible with the DS Guitar Grip, thus increasing the sales of both games.
