Also, I dunno about ham hocks, but some places around here don't carry pretty normal stuff. I need Munster cheese and a few others and none of them have it. I guess I have to go to the Market. But that's quite an excessive trip just for cheese. Eh.

Man, I just got a nice spiral sliced honey ham and I'm gonna use the bone from that. Half the fun of making stock from a hambone is eating the ham first.
I make some stuff really well. Huevos Rancheros, for example are my specialty. Also, some can attest that I make a pretty good lasagna.

it basically just means eggs country style (it's a mexican dish)
eggs, fried or scrambled
if fried, usually served over a fried corn tortilla topped with salsa, beans and rice on the side
or my mom makes them scrambled with the tortilla mixed in
it's a pretty versatile dish
