I've been listening to a lot of different metal bands lately, trying to find more that really tickle my fancy, and I haven't been overly successful - not only for metal, but also for rock that is metal-influenced.
Mastodon, Baroness, Boris and Red Fang are constantly rotating on my mp3 player, and I've also enjoyed Children of Bodom and Gojira when it comes to more....metal-y (metallic?) metal.
I tried High on Fire, Isis, and Intronaut most recently, and was unmoved.
Jazz influenced technical french death metal sound like something up your alley? If so, I would highly recommend giving Gorod a shot. Or, for more suggestions, some a little easier to listen to, read below for a broad rock/metal band/album list that I would recommend at least looking up on last.fm and see if you like.

If you like Children of Bodom you'll probably like Kalmah. I'm gonna second Amon Amarth from that list up there above me, because they're 100% my favorite band. Most of the other stuff on that list is pretty good, too.
You might also try Meshuggah. I recommend their album "Chaosphere," myself.

At the Gates may do it for you. We seem to have similar tastes in music, all of the bands on your current rotation also make it in to mine fairly regularly. At the Gates is more metal-y than the post-metal stuff you listed.

everyone including myself has just gone real heavy, but my favorite band of the past couple decades is Deftones. Title said metal and not heavy metal, so here's some Deftones.
Oh wow, I totally forgot I had made this thread. It is time to plunder it. Incidentally, the reason I'm asking here instead of the D&D metal thread is that I have already had suggestions from them, some of which were good and some not, and I'd like to get some different suggestions.
Let me give some feedback on some of this stuff, so that I may continue to exploit the brain-collective of this community:
Amon Amarth - have listened before, not a huge fan. I don't like the dragons and vikings and wizards kind of power metal thing.
In Flames - decent metal but nothing really interesting to me. I would not take notice if I heard it playing somewhere.
Muse - have already listened them to death.
Megadeath - can't really get into them, although I could give it another try.
Opeth - their acoustic album is fantastic; their actual metal I find less engaging, mostly due to the vocals.
Wintersun - not my thing at all.
At the Gates - the song that was posted is pretty good, appealing in the same way that Children of Bodom does.
Iron Maiden - obviously excellent.
Judas Priest - who doesn't love motherfucking Judas Priest.
Torche - I have listened before and they're good, but they've got a bit too much of the stoner rock sound going on for my taste.
Dream Theater - haven't listened in depth, but they are fun
Porcupine Tree - fucking rad as hell
Deftones - I really like them as well
This is just based on what I've listened to previously, and what I've scanned from youtube for a few of them.
I will check out some of the other stuff this week. Thanks a lot guys! I look forward to further suggestions, if anyone has more. Judging by my research into the horrible mess of genre names, post-metal and sludge metal are what I'm looking for.
All the big names have been mentioned, but one band I quite like is Sabaton. Their newest album (The Art of War) is good, as is the one preceding it. Their style is sort of a heavy power metal, and the vast majority of their songs are about great battles from world history.
