Another fun rat fact - Rats are sociable and like to live with other rats, so if you're trying to set up something like that experiment up you probably want a group that lives together. You probably don't need infinite rats though, so better keep them to one sex. However if you put a new male in with another male they're probably going to fight - even if you put the two into a neutral environment.
A group at the University of Cambridge found a way around this, by changing the neutral environment to a rat sized ball pit. The two rats largely ignored each other as they played in the ball pit, and would then go back to their invididual cages, but when you put them back together in other environments or caged them together they seem to remember their time together in the ball pit and would get along without fighting.

Rats can drive! The instigating event of this whole conversation has rendered this step entirely superfluous! If anything Ratatouille 2 is a food truck driven by Emile (who is a rat and can therefore drive) with the food prepared by Remy (who uniquely amongst rats can cook), with the customers served by Alfredo (who is a human, commonly employed in the service industry - but as a Parisian probably doesn't drive and has been established already as a terrible cook).
Real mice can neither drive or cook, and their tendency to widdle everywhere would make it very hard for Remy, Emile and Alfredo to get any kind of license for their food truck. Maybe...maybe there would be a scene in which a bunch of mice in a trenchcoat appear in order to order food from the truck, given that apparently no one here can tell the difference between them and other animals.
But seriously, all the mice quoted here are fictional! Ye gods, it's like you all attended the same science classes as the writers of Bee Movie.

The aim of the research was to see what effect the environment a rat was raised in had on its ability to learn new tasks. Although that kind of thing has been studied in the past, the tests haven't been particularly complicated. Anyone who has spent time around rats will know they're actually quite resourceful. So the team, led by Professor Kelly Lambert, came up this time with something a little more involved than navigating a maze: driving.
If you're going to teach rats to drive, first you need to build them a car (or Rat Operated Vehicle). The chassis and powertrain came from a robot car kit, and a transparent plastic food container provided the body. Explaining the idea of a steering wheel and pedals to rats was probably too difficult, so the controls were three copper wires stretched across an opening cut out of the front of the bodywork and an aluminum plate on the floor. When a rat stood on the plate and gripped a copper bar, a circuit was completed and the motors engaged; one bar made the car turn to the left, one made it turn to the right, and the third made it go straight ahead.

The subjects were 11 male rats, five of whom lived together in a large cage with multiple surface levels and objects to play with, and six who lived together in pairs in standard laboratory rat cages. Although both groups of rats learned to drive the car, the ones that lived in the enriched environment were quicker to start driving, and they continued to be more interested in driving even when there was no reward on offer beyond the thrill of the wind in one's fur.

Serious scientists usually refrain from imputing any further emotion onto research animals, but I'm no longer a serious scientist, so I'm happy saying that learning to drive made the rats more well-adjusted.
