We do, it's just not as much a common food staple. Ok, let's face it, it's not a staple at all. For whatever reason in America things like sweetbreads and offal have been elevated to a luxury food enjoyed usually in the fancier of restaurants. Because apparently only rich have the palates to enjoy it.
Except in some cases like in Denver where you can get Rocky Mountain oysters at a run of the mill steakhouse.

I always found it hilarious when I was working at Legal when (usually) japanese tourists would come in and order lobster at 11 in the morning and literally pick that thing apart. Tail, claw, knuckle ok sure. But then they pop the top half life the hood of a car and start picking around the lungs and head. I'm pretty sure at that point they stop because there is nothing under there worth eating.
I am CONVINCED that Chinese people started eating with chopsticks because those things are perfect for getting all the fish off the bones and also for getting all the best bits out of the fins, tail, and head

we had some fucking AMAZING stuff, most of it from America's Pacific Northwest
the Eld Inlets and the Flats were my favorite, they were SO GOOD
