Hiroki Kikuta (Secret of Mana) is a great composer. His range is staggering, from drum n bass to huge sweeping orchestral stuff, but he also can combine musical extremes really well.
Nobuo Uematsu is awesome too. I think the battle music from the Final Fantasies is his best stuff, largely because it's ether for his band, or it's way larger in scope than other stuff so he can go all out:
This is used somewhere in Ultima VII as well. I'm pretty sure it is the music from 'The Paws' but I'm not entirely sure. I am however sure it is in there somewhere at least the first chunk of it.

Yeah, this is actually "Stones". It was used in a few Ultima games.
I love it so much.
And the theme of the main lair, which was played to different instruments, so the intro would start sounding like whatever world you were about to enter.
My buddy can play this on piano, and always slips it into his lineup when he plays at the cafe in town. It's fun to pick out the people who have played Banjo Kazooie before, their eyes light up as soon as he starts.

There are no soundtrack pieces from Wizardry: Tale of the Forsaken Land on youtube, and I want to fix that. Very dark, traditional-esque scoring.
